Oysters are one of the sea's most appreciated jewels. Cultivated, eaten and sought after the world over, they're loved for their meaty texture and the extreme taste of the sea they leave on the palate. Certainly some people will say that the best way to sample them is in their natural state, because there's no better presentation that in their own shell. But there are certainly also those who think that the dish they are served in restaurants or at functions can convert this excellent product into an exceptional dish. [caption id="" align="aligncenter" width="614"] Ostra at[/caption] Is it possible to unite these two perspectives? Pordamsa have done just that. The La Bisbal d'Empordà-based porcelain company was inspired by the sea in the creation of some of its products. They live right by it, living and drinking in the sea aromas and capture this in their collections. One example is the Textures mediterrànies series and, more specifically, one of its pieces, the Ostra, a dish which is a real reproduction of the shell of this sea creature. It comes in four different sizes to cater for multiple uses. The exterior has a matt, rough texture, while the interior is shiny and smooth to create a contrast with the food that is served on it, whether that be the mollusc alone, an oyster tartare or any fish or seafood-based dish. This piece therefore finishes off the dish and gives it that special touch people look for in an appetiser (mise en bouche) or starter. When this dish is placed on the table, practically all of the five senses are activated. The food arouses the senses of taste and smell, whilst the diner, simply by touching and seeing Pordamsa's oyster - modelled on a real oyster shell - relates that experience with other similar gastronomical experiences or with memories of other moments spent close to the sea.
