Most future chefs, pastry chefs and catering establishment owners come through catering schools. There they learn the basics and techniques and can choose a speciality. The Girona Catering School has been training professionals for almost half a century and is still constantly seeking new ways to offer more options to its students. With this goal in mind, two years ago it began offering a degree in Kitchen Management. Many of the students who take this course have their own business and manage it themselves and, here, find the guidance to perfect their skills. This month, the students in this first year of the course visited Pordamsa's premises for an activity scheduled within the Tableware module. «We chose Pordamsa for their good work practices and because they are pioneers in design, innovation and modernity», explained Manel Romero, one of the professors accompanying the group of students. [gallery link="file"] During the visit, so the students could see what the market has to offer them in this area, they learnt about the history of the company, its philosophy and the design and manufacturing processes of porcelain items. They were shown the production lines and the exhibition area, and this helped them to come up with ideas for presentation and tableware they could use for the dishes they prepare. What most impressed them was the Mediterranean Textures collection, comprising pieces that are faithful reproductions of mussel, oyster and sea urchin shells. "Apart from being impressed by the design, they thought they were an excellent solution to serve seafood and save themselves the hygiene-related headache of how to present the products inside their shells". Encounters like this are mutually enriching since, on the one hand, Pordamsa is in direct contact with these professional and can pick up on their needs and concerns and, on the other, these young chefs in the making can see the origin of the materials they work with first hand and find practical design solutions to decorate the tables of their restaurants. And all right on their doorstep.
