We’re Smart Green is a guide created by Belgian chef Frank Fol, who for over thirty years has been passionate about the world of vegetables and all products that are grown on soil. For this reason, he promoted the creation of the We’re Smart World project, which seeks to form a greener community that prioritizes fruit and vegetable-based cuisine. 

At the top of this year's Top 100 vegetable-based restaurants is the Luxembourg restaurant La Distillerie by chef René Mathieu. It is also worth mentioning that six Spanish restaurants are on the list. In 28th and 47th position we find two restaurants from Barcelona, The Green Spot and Gatblau respectively. Two more can be found in Madrid, El Invernadero in the 36th position and La Bien Aparecida in the 90th position. Also, Ricard Camarena, with two Michelin stars, is present in the 33rd position, and finally in the 83rd place, Azurmendi, the restaurant with three Michelin stars located in Larrabetzu (Bilbao).

Xavier Pellicer, after being awarded the title of Best Vegetable Restaurant in the World for two years in a row with his eponymous restaurant located in the heart of Barcelona's Eixample district, has once again been distinguished for his work in vegetable cooking, and has been included in the list of 'Plant Based Untouchable Chefs', thus becoming 'Personality of the Year' and an example for all the world's chefs.

Hundreds of restaurants from all over the world were visited by the We're Smart jury. The team judges the restaurants on the proportion of fruit and vegetables on the menus, as well as on their culinary creativity, their ecological footprint and the flavour combinations created with seasonal ingredients. All of this is done with the aim of bringing together people and companies that have a healthy, ecological and sustainable approach to food, thus helping to evolve society towards more intelligent solutions.
